FLINCHY'S SUSQUEHANNA CRAB CAKES
Take Note folks - No Filler!
Finely dice the following:
- ½ ea Red Onion
- ½ ea Red Bell Pepper
- ½ ea Yellow Bell Pepper
- ½ stalk of Celery
Sauté the above in butter, olive oil, & white wine until al dente, drain, reserve.
- 1 ea 1 lb can Colossal Crab Meat
- 1 ea 1 lb can Jumbo Crab Meat
- 1 Tbls Mayonnaise
- 2 ea Jumbo Eggs, mixed well with fork or whisk
- Dash Worcestershire Sauce
- Dash Texas Pete Hot Sauce
- Dash Old Bay
Very gently and slowly mix all ingredients together with hands or a wooden/plastic spoon to avoid smashing or otherwise damaging the crab. Shape into desired size crab cakes and broil until crab is browning on the edges. Dust lightly with Hungarian Paprika.

Flinchy's Apple Stuffed Honey Pork Chop w/ PA Dutch Home Fries
Apple Stuffed Honey Pork Chop
- 2 tablespoons Olive Oil
- 4 -1" thick Hatfield Pork Chops
- 2 Cohen Apples, diced
- 2 sprigs rosemary, stem removed
- 1 Sprig thyme, stem removed
- 1 White Sherman Masser Potato Farms Potato, diced small
- White wine & Chicken Stock for deglazing
- Salt & Fresh Ground Pepper to taste
Put a horizontal cut in side of pork chop. Mix together all other ingredients and stuff inside pork chops. Add olive oil to sauté pan and sear pork chops on each side over high heat. Reduce heat to medium and cook until internal temp is 135 or to medium rare (pink inside). Deglaze sauté pan with white wine & chicken stock. Pour deglazed juices over chops. You can also finish it in an oven at 425 degrees. Salt & pepper to taste.
PA Dutch Home Fries
- 1 ea, tablespoon of olive oil & butter
- 6-8 White Sherman Masser Potato Farms par-cooked Potatoes, diced
- 2 shallots & ½ red onion, diced
- 1 large Buona Foods Portabella Mushroom, diced
- 1 Hills of Home Farms Green Pepper, seeded & diced
- 4 cloves of garlic, crushed
- Salt & fresh ground pepper to taste
Boil potatoes ahead until almost done (still firm to a fork) and let cool. In large skillet over medium high heat, cook potatoes until lightly brown. Reduce heat to medium and add remaining ingredients and cook until potatoes are fork tender and browned on outside. Salt and pepper to taste.
Glaze
- 1/2 cup, chicken stock
- 1 tablespoon, balsamic vinegar
- 2 oz, Apple Pucker apple liquor
- 1/2 cup, Dutch Honey Gold Honey
In small saucepan over medium heat, combine all ingredients and cook until a thick consistency. Use an emulsifier if available.
Garnish
- Cohen apple. Cut into wedges
- Long sprigs rosemary
- Finely diced parsley
Assembly
In center of heated plate, place PA Dutch Home Fries and spread out. Place Pork Chop in center of plate surrounded by potatoes. Drizzle glaze over top of chop and lightly around outer rim of plate. Dust with parsley. Place two sprigs of rosemary in pork chop in "V" shape. ENJOY with a nice white Pennsylvania wine. Serves 4. Recommend you start the Honey Glaze first as it takes awhile for it to reduce to a nice thick consistency!

SALMON FLORENTINE
This delicious entree is derived from a recipe by Chef Colby at Flinchy's.
It is a blend of many flavors that delight the palate.
* Makes one serving
- 6 oz Filet of Salmon, even thickness
- ¼ cup Sifted flour for dusting
- 2 oz Clarified butter
- To taste Sea salt & fresh ground pepper
- 2 slices Bacon, par-cooked & chopped
- 1 clove Garlic, chopped
- 2-3 oz Jumbo lump crabmeat
- 2 oz Lemon juice
- 2-4 oz White wine (Chablis works well)
- ¾ cup Baby Spinach (remove any stems)
- 2 oz Italian seasoned bread crumbs
- 1 oz Parmigan Reggiano cheese, shredded
Assembly
Dust salmon with flour on both sides.
In sauté pan over medium heat, sauté salmon in butter, salt & pepper.
When down side of salmon starts to be seared and turn brown, flip.
Note: only flip sides once!
Add bacon, garlic, & crab around the sides of salmon.
Add lemon directly to garlic (prevents burning).
Add wine, reduce heat, & simmer for 2-3 minutes.
Add ½ spinach, breadcrumbs, & cheese.
Once spinach is wilted and cheese melted, remove fish to warm plate.
Add balance of wine, deglaze pan and pour crab, spinach mixture over salmon.
Enjoy with sauté vegetables, rice pilaf, and a nice Sauvignon Blanc wine.

HARLEY BURGER
This sandwich is derived from a recipe in the Harley Davidson Family Cookbook.
It was adopted by Flinchy's after a visit by Margo Manning, Bill Harley's granddaughter to promote the book and has become a favorite.
* Makes two, three, or four burgers
- 1 ½ tsp salt
- ½ tsp fresh ground pepper
- 1/8 tsp ground cayenne
- ¼ tsp paprika
- ¼ tsp chili powder
- 1 lb ground beef, 80/20
- 1 cup chopped onions
- 1 slice Cheese of choice per burger
- 1 slice Canadian bacon per burger
Assembly
Combine the salt, pepper, cayenne, paprika, &chili powder in a small mixing bowl. In a large mixing bowl, add the ground beef and onions and thoroughly mix together. At the same time gradually add the spice mixture to ensure an even mix.
Cook burger on a grill, griddle or even pan fry. Best outdoors on a grill!
After the flip (only flip once) place Canadian bacon on grill to heat and get grill marks. When almost to temperature (135-145) add cheese & top with bacon.
Serve on a toasted Kaiser roll with slice of tomato, lettuce, catsup, mustard and chips.

NACHO TORTILLA CORN CHIPS
Why didn't we think of this before? It's sooooo easy!
- 6" round corn tortillas
- dirty salt (kosher salt with course ground black pepper, 4-1 ratio or less)
- Deep fryer with HOT oil
Assembly
Cut tortilla shells into 6 wedges each and fry in oil until crisp and brown.
Drain briefly and put in large aluminum mixing bowl and IMMEDIATELY hit with the dirty salt, this is very important that it happen while the chips are still very hot.
Oh yummy - and especially with Flinchy's salsa!

Flinchy's SALSA CALIENTE
This is a great tasting easy to make fresh salsa that rivals any Mexican restaurant!
- ½ ea large red onion
- 2 ea jalapeno or other hot pepper (a little Habanero to kick it up!)
- 1 tsp sea salt
- 1 tblsp-crushed garlic
- 2 ea cloves fresh garlic, finely chopped
- 1 ea juice of fresh lime
- 1 ea bunch cilantro, destemmed
- 1 ea 28 oz can Roma (plum) tomatoes
Finely dice all dry items in blender.
Add limejuice & crushed garlic
Pulse blender 5 seconds
Add plum tomatoes & puree
Add salt while pureeing.
Chill & serve with homemade chips

Granny's Egg Nog Recipe
- 1 doz Jumbo Eggs
- 1 ½ cups Sugar
- 6 oz Captain Morgan Spiced Rum
- 1 qt Heavy Cream
- 1 qt Milk
- 1 tbls Vanilla Extract
- 750 ml Seagrams 7 Whiskey (1 bottle)
- to taste Nutmeg, ground or fresh grated
Assembly
Separate Eggs
Add 1 cup sugar to yolks and beat with whisk until mixed well
Whip egg whites until frothy & bubbly
Add ½ cup sugar and beat with whisk until mixed well
In large mixing bowl mix whites and yolks back together
Add rum and mix well
Add cream and mix well
Add vanilla and mix well
Add Seagrams 7 and mix well
Add a sprinkling of nutmeg across top of bowl, mix well
Serve in small cups with a sprinkle of nutmeg on top.
Keep refrigerated. Can be stored in Grolsch beer bottles with ceramic lids. Use as gifts. Remember: You are using raw eggs, so there is a danger here as there is with all raw or uncooked food.
